If you’re making sweet shortcrust pastry, try grating fresh ginger into it (I freeze my ginger so it grates easily and finely). About a tsp per pound of pastry. It gives the pastry a lovely fresh and light flavour without the overwhelming flavour you’d get from ground ginger.
